So what's the point of Graphene? Might as well just use a real Linux.

Not sure what about it does not qualify as "a real Linux"...
Unlike a traditional distribution it compatibility with a large # of mobile apps including things like Signal and WhatsApp along with a strong application security model, modern exploit mitigations, verified boot, etc.

Every app is sandboxed. Users are in control of the data entered into apps and access granted via permissions, the system file manager, etc.
Profiles can also be used as isolated workspaces, particularly for apps refusing to run without a data access permission being granted.

It was simply an example of a popular app without a hard dependency on Google services being baked into the OS.
Most open source apps work fine without Google services provided by the OS. Many closed source apps work without it, while many others partially or fully depend on it.

The one on the Play Store has a hard dependency on Play services. At least historically, they've gone out of the way to forbid using an alternate OS as a form of anti-cheat. I'd be surprised if they had a version of it without that, even if they have one not depending on Play.
If it works on generic Android without Play services it should work on GrapheneOS.
Only reason it wouldn't be the case is if an app has serious bugs uncovered by the many added exploit mitigations. Some apps have blatant memory corruption during regular use. Getting less common.
