thinking about how computers simply love to gaslight 🤔 i use G Suite and my emails end up in spam for some people and i have no idea how to fix this other than getting a dedicated IP and someone mentioned that twitter never shows them notifications for my interactions

Make sure you have Google's DKIM keys set up properly, hard fail SPF and p=reject DMARC. Ideally, the PTR records for the IP addresses used to send mail match the mail server domain and I guess there's not much you can do about that when using G Suite.

The only issue I've run into hosting my own mail server is that the initial IPv4 address is often blacklisted from previous abuse. I currently have Postfix set to send mail only via IPv4 despite having fully working IPv6 because OVH only gives me /128 instead of a /64 block.

IPv6 reputation is generally done based on /64 blocks but OVH only gives you a /64 for a dedicated server and I currently use a VPS for the mail server. I could switch but it's really not worth it to me when I can just disable sending mail via IPv6 while still having IPv6 work.
