Does it support all the apps available on android, or are there restrictions?

The point of GrapheneOS is to avoid all privacy killing apps from big tech like Google, Facebook, etc.
It’s about only running open source apps that don’t phone home and encrypt data where appropriate
So that excludes basically every app an average smartphone user uses today

The purpose is providing a very private and secure base OS with minimal bundled apps and no integrated proprietary services. GrapheneOS is focused on implementing privacy and security enhancements: grapheneos.org/features.
Users can choose the apps best suited to their usage.
If a user wants to have a user profile with Facebook apps including WhatsApp, that's perfectly reasonable, and those apps work fine on GrapheneOS. GrapheneOS goes out of the way to strengthen the app sandbox and improve the permission model so that you can do that safely.

Even if an app demands bulk access permissions and refuses to run without, you can use profiles to run it in an isolated workspace where a permission like Contacts or access to user files simply won't give it valuable data. No shared data/communication across user profiles.
