how difficult would it be to incorporate a dual boot option based on the unlock code entered? E.g. a "main" account that you usually use, and a "sterile" account in case you're crossing an international border and don't want them seeing your wife's naughty texts.

There are already user profiles. Consider the advice in grapheneos.org/faq#encryption of using the owner profile only for activating the device after boot, managing other user profiles and basic usage in situations where you don't want to decrypt important data.
