Does Signal work on ? If it doesn’t, that’s (sadly) a deal-breaker.
Also, a really annoying alarm app would be nice ― I only mention it because any 3rd-party alarm would be too easy to turn off quickly.

Signal works well.
There's a good alarm clock app built into the OS. Suggest just setting multiple alarms.

Often better than the stock OS. It depends on the apps you're using. Some use inefficient implementations of push (or even do polling) when FCM isn't available. Signal's non-FCM push implementation is decent now and GrapheneOS with Signal still uses less power than stock overall.

What do you recommend for email, and is there a way to install apps such as Element (from )?

I don't have any particular recommendation for an email app right now. Element works fine. You can install apps from the Play Store using Aurora Store and F-Droid has a lot of open source apps in their main repository. There are other F-Droid repositories and other app stores.
Thank you. I was worried about a bootstrap problem ― if there was no store on the device to begin with, it would be rather harder to install other apps.
Speaking of alternative app stores, does GOS have any kind of mechanism to allow those store apps to automatically update apps in the background? I think I remember you not liking apps touching the System partition like the F-Droid helper app. Updating one-at-a-time is tedious.

Modifying OS images after building and signing a release is not possible due to verified boot.
The approach taken by F-Droid to unattended app updates means it has a massive amount of power through being able to install any new apps with no consent including ancient API level.
