Wondering if there's something specific about iOS that prevents them from detecting that users followed a link in the same way? Seems like a very Apple thing to do.

There's nothing stopping them from doing it there too. They keep track of it there like everywhere else. If they're just testing it, it makes sense they'd only invest the resources to do it on one platform first.
