how is it possible that when writing a post to Twitter the app suggests you the latest photos from folders like "viber images", "tmp" (made by myself), etc? shouldn't the scoped storage on GrapheneOS prevent that, allowing only manual pick up of the photos?

The app is using the legacy external storage system and you chose to grant it full external storage access. GrapheneOS doesn't currently make changes to how external storage works. You probably read about the plans to globally enable Scoped Storage, and people haven't helped yet.

There is currently very little progress due to lack of contributions. The project is in a very dormant state for the time being and you shouldn't expect any big announcements or major new features to be implemented, unless you or others plan to step up and help make it happen.
