Also, how will GrapheneOS be impacted by the Google Play system updates mechanism in Android 10? Will they just distribute the patches as normal OTA updates or something? Or is that still unknown?

It doesn't benefit from the ability to ship out-of-band updates and they might as well be shipped as part of the regular monthly updates The out-of-band system updates only provide a small subset of the monthly updates and proper monthly updates are still required anyway.
Those changes aren't aimed at cases where the OS is properly maintained. There are some minor benefits to it and it properly preserves verified boot by chaining it to them. It's a non-event for GrapheneOS and more generally for devices like Pixels receiving proper updates.
