Reacting emotionally to generalizations with whataboutisms simply reveals blindspots. If I say "Blacks commit more crime" and you tell me I'm wrong because you have an outstanding black friend, it doesn't change the validity of the point. It just exposes your vulnerability to it.
Additionally, if when I say "Mexican food is sloppy and gross" you hear "You are sloppy and gross" - you are revealing that your identity is so tied to Mexican food that any criticism of it is interpreted as a personal attack, which quite frankly at that point it should be.
