Just get a normal 3600 over the 3600x. They can usually clock up to 3600x speeds anyways and the frequency bump isn't that helpful. Also if you don't need the NVENC encoder and realtime ray tracing the 5600XT and 1660 Ti are solid alternatives to the RTX 2060.

I wouldn't save too much on the CPU, especially for streaming. I'd get an AMD Ryzen 7 3700X instead. It's only ~120$ more

OK. Looks like the CPU is a place where I have some flexibility. I have a few folks looking at this, so all the input I get will help me make a decision. Luckily, my budget is a little flexible. Thank you for the advice!
