Best salmon: Crush garlic, grate fresh ginger, fresh tumeric. Dice a medium carrot and a medium red onion. Add crushed garlic to a dutch oven with a good hunk of butter (~60 grams or so) over high heat. When the butter is melted fully, add onion and carrot. ...

When the onion starts to clarify, add the ginger and tumeric, give it a stir. Give it a minute or so, add a chopped leek. Let the leek soften. Make room for the salmon and put it in skin side down for about 5 - 6 minutes or so - until the skin is browned.

Flip the salmon and deglaze the pan with some chicken broth - add enough for about an inch of liquid. Salt the skin side of the salmon and add enough salt for the vegetables. Grate on some pepper. Lower the heat to medium low or low, cover the pan, poach / steam the salmon.

It's been a while since I lived in salmon country but you can mention the type of salmon you buy. Some folks like to look for salmon from a specific river (Copper, Columbia) and/or a specific species like King or Coho. Then they'll look for line-caught fish. But it's all good.
