That's just a test to see if you're willing to ignore their instructions.

Yes, especially for 'professional' jobs. They want to weed out someone who'll say, 'sorry idk how to do this;' signal that you're independent and can pick shit up

So I need to be prepared to say I can do things I can't do if they ask me?

You can do things you current can't. Just tell them about your related experience and that you learn skills quickly. Job said needed a 'SQL expert'. I just flat out told the CEO I've used it but barely, and it's not rocket science and I'll figure it out when needed

This is literally one of our fake reqs I just noted above. The real req is something like "is not ret4rd3d, can be shown SQL queries once or twice and not forget to write them down in Notepad somewhere".

God that makes me so mad

The flip-side: I am on this side of things, so I try to be more conscientious about this (see above), but this is 1/100 things I have to do. Am I going to fight my boss and/or HR because they kept the requirements from 2017? No, I have shit to do. Hopefully you do too, soon!

The problem is that what you want to say isn't "SQL expert" it's "someone with an IQ > x and willingness to apply it to SQL" but our culture allows you to say you want an "expert" but doesn't allow you to say the latter.
