Baseball has an easily measurable outcome (wins) and simple inputs (players, cost of players) compared to other businesses. Imagine how badly those can be run when they lack those metrics.

Now baseball is played close to optimally but people might find it boring - which means in the past individual teams were sacrificing for the overall good of the game without realizing it.
