I suspect we might be having a lot of dermatologists, dentists, veterinarians, med school students, and the like filling in in ERs and ICUs before this over.

There are a fair number of underemployed female doctors, either because they have small children or because their MD husbands are so rich. I'd probably focus first on getting childless or emptynester 50-something female MDs to put in 60 hour workweeks.
