Doing it that way definitely gives you the most flexibility during editing, which is a big plus.

Though I typically plan out shots ahead of time and shoot accordingly, so I don't have to do the whole thing twice.

I think the plan is 1. set camera for wide shot, shoot one "take" 2. set the camera for a close-up, shoot another "take"...?
