What is that exactly? A way of holding & dropping the ball?

Yeah it's called a drop punt, it puts backspin on the ball which stabilises it in flight but as pointed out, it will almost always bounce back on landing. In Aussie Rules it's usually marked (caught on the full) but less so in NFL.

Am I right in suspecting American Football types forget the original purpose of the Aussie Rules punt, which is to get the ball a long way down/across the sizable field quickly, hopefully to one of your teammates spread out everywhere or through the tallest goal posts.

Right, it’s a very accurate punt, but you can’t get as much hangtime if you’re going for distance than if you hit a spiral. It’s very much a line drive in that situation.
