The filling is easy enough to make, as is the pie dough, but it for sure seems like something you’d spend three hours the night before prepping all the materials for and then cooking in big batches the next day.

I just got this book as well. I mixed the bacon 50/50 with ground beef and tossed in dried cherries. The tart helps a lot.

Yeah I can see that, it’s really rich if you don’t have some kind of acid in there. Next time I might try that, or possibly some white wine vinegar when I’m browning the beef.

The Brits all have chutneys they serve with meat pies for just that purpose.

Lol, so the meat pie *was* from the Heroes’ Feast recipe (I reviewed it for Lightspeed, should come out in December - verdict was it’s a good cookbook but a bit Eurocentric in cuisine choices). I am no longer playing in my band since they are in MN and I’m in CA.
