Really want to make some this week, but I've never made any before.

3-4 chicken breasts, cut into 1” wide strips/chunks 3-4 red potatoes, peeled, cut into 1” cubes 1/2 lb of carrots, cut to bite size 2 baby bok choi, cut into 1” wide strips, separate leaves from stems Diced Thai chilies to taste 1 can coconut cream 1 can coconut milk Curry paste

Cook the chicken in a pan over medium high heat with a glug or two of vegetable oil until no pink is visible. Set aside. Heat up another glug of vegetable oil in a wok-style pot, add curry paste when hot. Stir for 1-2 minutes. Add chicken and liquid, along with coconut milk.

Stir to incorporate, let reduce for 3-5 minutes. Add all veggies except bok choi leaves, add coconut cream, add 1-2 cups of chicken broth (didn’t fit in recipe section). Stir to incorporate, bring to a boil, drop heat to medium low and half cover the pot. Stir occasionally.

Should be done after 25-40 minutes, depending how thick you like your curry. Add bok choi leaves three minutes before you think it’ll be done, stir to incorporate. Serve over rice.
