Really want to make some this week, but I've never made any before.

3-4 chicken breasts, cut into 1” wide strips/chunks 3-4 red potatoes, peeled, cut into 1” cubes 1/2 lb of carrots, cut to bite size 2 baby bok choi, cut into 1” wide strips, separate leaves from stems Diced Thai chilies to taste 1 can coconut cream 1 can coconut milk Curry paste

Cook the chicken in a pan over medium high heat with a glug or two of vegetable oil until no pink is visible. Set aside. Heat up another glug of vegetable oil in a wok-style pot, add curry paste when hot. Stir for 1-2 minutes. Add chicken and liquid, along with coconut milk.
