Close to Alton Browns recipe. Dif is: 1. 1 tsp kosher salt both sides. 2. Set in fridge on rack on parchment lined sheet pan for 8-24 hours. 3. Let come to room temp. 4. 1/2 a tsp conola oil both sides. 5. Sear in cast iron pan @ 500 for 45 secs. Time it.. 6. Let rest 10 min.

You’re clueless about cooking steaks if you must do it in oven, turn on broiler 350 degrees. One 1/2 inch thick steak: 3 minutes on one side. Flip for 5 minutes. DONE.

Perfect steaks every time: Heat grill for 15 minutes as hot as it can go. Place steaks on for 15 seconds, turn for 12 seconds. Perfectly blued - serve with A-1.
