Oddly enough, people always talk about steak sous vide, but I think it's overrated for steak (for the most part).

Have you done a steak for 6 hours in butter at 135 then quickly seared and sprinkled liberally with Malden Salt? Becuuuzzzzzzzzz

1. If your steak is quality, 6 hrs is too long, the beef will get mushy. Also, the steak will lose too much moisture. 2. Butter in the bag dilutes the flavor of the steak as it extracts fat soluble compounds. This is pretty well known and borne out by testing.
