the whole tip things needs major rework. Why is it food service employers are allowed to pay wait staff ridiculously low wages and have them rely on totally optional tips to compensate?

This i really don't get. In europe, you don't tip. They pay their waiters and people like that enough.

I concur, I would prefer to not have to tip 20%. Whenever I eat out, I always look at the price of the menu item and add 20%. If I am ordering a $65 steak, I know I have to add $13 to the price on the menu.

Servers rely on tips. Their hourly pay is legally below minimum. Clerks are not on this pay scale. I refuse on principle because I recognize this practice for what it is. Pure manipulation. Unless, of course, the clerk has been extraordinary.

The solution to this is better management, and paying great servers an equal wage to their counterparts, I.e. the kitchen staff. Eliminate the gratuity factor if you’re expecting a gratuity

Should be paying all of the servers equal wages not just great ones. Get paid less and be forced to rely on tips is absurd

I tip based on the service I'm given. You're not going to get a good tip by default, you earn it with your conduct, professionalism, and presentation. Bad service will either receive a poor tip or no tip. Bad behavior should not be rewarded.
