Now that your fish is steamed you can plate it. Lay it horizontally along your plate and cover it with your scallions and cilantro before pouring your heated oil and white wine mixture over the entire thing. Try to arrange your tomatoes at least somewhat attractively.

Rinse your fish with fresh water and be sure they’re gutted and scaled before rubbing them down inside and out with your salt and pepper. When you’re ready, stuff it full of ginger, with enough left over to cover the outside before placing it in your steamer for 8-10 minutes.
