I've never been satisfied with the nature of interior mutability/cells tutorials. Very focused on the how and not enough on the why/when

I think we're missing one step up which talks about when and why interior mutability is a good idea. I believe there's one example in "the book" about using it for mocking, but it would be nice to have much more
