I'm from Central Texas -- 7th generation and grandson of a master BBQer -- and I think it's dumb to argue about BBQ either way. Everyone's an "expert".

The problem is that Texans think you’re supposed to put bbq sauce on cow. God specifally created pigs to put bbq sauce on. Memphis bbq is the best.

No, actually in traditional Texas BBQ, it was considered bad form to put any type of sauce on the BBQ...it meant you were a poor cook.

Yes. Texans are great with cow but “Barbeque” means lovingly slathering pork with a molasses-based tomato and spice sauce while cooking it over a hickory fire. A broad use of the word barbeque is incorrect. When not slathering, it’s called “Cooking out”.

Nope. Hey, I like molasses too, just not on expertly cooked beef...pork cookouts are fine, but if you have to cover up the taste with tons of sauce, how good a cook are you really?

Southern thing. I believe it came about as a way for poor folks to make a poor cut of meat palatable. My Dad remembers eating chitterlings during the depression. I would need a lot of BBQ sauce for that!

Probably true, most ethnic foods were originally recipes to make poor food edible...like fajitas. Real original fajitas were made out of beef skirt, and it take skill to cook that right.
