So where on my CV do I put, "figured out how to get an excel spreadsheet to correctly calculate a quiz average for 'six quizzes, lowest score drops'"? That seems like it ought to be CV worthy.

Assuming they're in columns A-F, it's =(SUM(A2:F2)-MIN(A2:F2))/5 to get the result for row 2. But then, history isn't a field known for computer prowess, so who knows?
Yeah, precisely what I did, with some additional math to get the quizzes (each out of a variable number of points) to produce an average out of 100 which could go into the final grade calculation.
