On camps, Keppie, Making of the Roman Army (1984) is still a good starting point. M. Dobson, The Army of the Roman Republic: The Second Century BC, Polybius and the Camps at Numantia is more recent and detailed, but also less beginner-friendly.
On artillery, E.W. Marsden, Greek and Roman Artillery (2 vols) is still the standard reference, but isn't exactly priced for mortals. See if you can get it via a library.

Finally, it's awkward to recommend because it has some other flaws, but honestly the best approachable survey or fortifications in the imperial period over a long span of time may still be E. Luttwak, Grand Strategy of the Roman Empire.
