What would the “primary weapon” for a heavy-armored combatant generally look like? Would it mostly be spears and polearms?

Mostly spears and polearms yes. Swords were typically backup weapons (Romans unusual in this regard). Two-handed swords were often primary weapons but hand-and-a-half swords were generally backups (including longsword and katana).

Presumably a non-noble man-at-arms, given the weapons and the equipment. The kettle helm is great. Give the fellow a brigandine and you're all set for late-14th, early 15th century fighting.

Unfortunately, D&D has an unfortunate record of making 1H spears be bad weapons. The need to make Martial weapons better than Simple ones, along with a limited number of effective balancing factors, means they end up being low damage.
