There is a fairly large body of scholarship on how cavalry might have functioned at various points in history; I am relating the conclusions that scholarship has come to. The tricky thing is effectively no one has real cavalry experience, esp. not pertaining to the Middle Ages.
If you're interested in what we know about cavalry combat in the Middle Ages, I would suggest C.J. Rogers, Soldier's Lives Through History: The Middle Ages (2007) Verbruggen, The Art of Warfare in Western Europe During the Middle Ages (1997)...

...and J. Keegan, The Face of Battle (1976). For archer cavalry, T. May, The Mongol Art of War (2017). You will find that there is some reliance on knowledge about the behavior of horses and on equestrian survivals of military drills (e.g. sport horse archery, tent-pegging)...

... That kind of knowledge is valuable, but it is not the only, or even the most important, sort of knowledge being used.
