So, question for politics-knowers...does Amy Klobuchar have some position (beyond being a Senator) whereby she gets to be, like, everywhere? Or is her role in the inauguration and congressional counting electoral votes just part of her reward for dropping out at the right time?

I'd actually disagree here. Having both of them do it at the same time (along with Beto) signaled unity within the traditional party establishment, even if Klobuchar's support was slim. That was, I think, the desired signal and evidently it worked.
And she was probably the second highest profile name in an absolute flood of endorsements March 1-5 (check it out here: https://projects.fivethirtyeight.com/2020-endorsements/democratic-primary/ … ), which sent that message really strongly.
