Because we've gotten or are getting slice of life stuff for rebel spies (R1, Andor), pilots (Rogue Squadron/SW: Squadrons), etc. But they haven't really told the story of, say, one of the ships in the rebel fleet at Endor - what struggles, triumphs and losses got it there?
Also, we'd get a bit more focus on what capital ships (as opposed to starfighters) actually do in the Star Wars universe, which would be fun world-building.
Anyway, Disney, if you want to roll up a dump-truck of money to my house to make this, I'm game

Basically! I think the Star Wars setting offers a different set of opportunities than BSG. It integrates the spiritual stuff a bit better, and their society still exists, along with the actual prospect of final victory allowing for a more upbeat tone.
