Like, the main cast could be an ensemble mixing the bridge crew, some fighter pilots in the ship's air-wing, some of the marine det., some of the lower decks guys. So you get a real upstairs-downstairs crosscut of a ship on the ragged edge of the rebellion.

For added drama, I'd have the main ensemble all be from the same town, but different socioeconomic classes (like, a Frodo-Sam thing), so you an 'everyone's in this together' vibe, mixed with the normal set of misunderstandings and clouded preconceptions.

Because we've gotten or are getting slice of life stuff for rebel spies (R1, Andor), pilots (Rogue Squadron/SW: Squadrons), etc. But they haven't really told the story of, say, one of the ships in the rebel fleet at Endor - what struggles, triumphs and losses got it there?

Also, we'd get a bit more focus on what capital ships (as opposed to starfighters) actually do in the Star Wars universe, which would be fun world-building. Anyway, Disney, if you want to roll up a dump-truck of money to my house to make this, I'm game

This would be interesting. we know that ship based shows can work well (expanse, star trek, BSg, etc) so having a show focusing on a military ship and its crew is certainly viable. so far the closest we've gotten was the middle seasons of SW:Rebels, with Phoenix Group.

I think this is precisely why we don’t see this - the first reaction would be to directly compare it to ST or BSG.
