It’s pronounced “Seleucus.”
I mean, in this case the answer is that it is σέλευκος. We have two variant spellings because most English spellings of Greek names passed through Latin (where σέλευκος became Seleucus, rather than Seleukos).

In practice, you will hear either the Latinized pronunciation (Sell-oo-kus) or that Greek (sell-ehoo-kos). A soft 'c' (sell-oo-sus) is incorrect in both cases, but a frequent way people who've seen the name written but never pronounced will say it.

Seleucid is thus correctly either Sell-oo-kid or Sell-ehoo-kid (for the fancy folks matching the ευ Greek dipthong) but never Sell-oo-sid.

I assume Seleucid is the Latin as well? I don't actually know any Greek at all (and only really know the letters because, well, everyone does I guess and also astronomy). It would be interesting to learn the basics, at least.

Seleucid is just the shortened form of σελευκίδος (Seleukidos), with the ending (-os) taken off. I don't actually know where in the transmission Seleucid lost its ending...
