I'd have to do some research for that conversation. I haven't actually delved much into practical architecture in my research and my coursework on it mostly focused on identifying styles and dates, rather than methods of construction. Always something more to read about!
I think it's actually the earthen fill that goes between the beams hammered down that generates the seal. It doesn't have to be perfect - it just needs to restrict water inflow low enough that the pump works faster. They could tar the inside once the water was pumped too.
