Oh boy, ancient military historian to the rescue! It was frustratingly hard to get good figures for elephant nutrition, but estimates for Asian elephants range from 135-300kg per day in a mix of grazing and fodder. At that scale, I'm not sure how much difference munchies make.

Oh the fun part with elephants is that the 'African' elephants in the ancient sources aren't either species of modern African elephant, but a third, now extinct (sub)species of elephant which was somewhat smaller than Indian elephants.
As for the land-speed of an unladen war elephant - just remember, you don't need to be faster than the war elephant. You just need to be faster than the fellows standing next to you in the line.
