Have not been but my instinct says this is very clearly a situation where the thing everyone visits is being declared overrated, rather than there being any defensible case for it actually sucking

I mean, I think it's also "do you like painstaking history reenactment." If you do, Colonial Williamsburg is pretty much the gold standard. Watch people make things with traditional methods, so on and so forth. If you don't like that...well...go somewhere else? Busch Gardens?
