Those are poor online courses, but I hesitate to blame the instructors; many online courses are done by underpaid and overworked adjuncts. I'm not sure what to say to the assumption that there is no value in mulling over big ideas and important theories with great minds.
Speaking broadly from the Mediterranean educational tradition stretching back to the classical period, it seems to me to have long been understood that the best way to become learned and enjoy the benefits of that knowledge was to converse with the already-learned.
I think we often fall into the false assumption that knowledge-banks like wikipedia are new. They are not. The early Middle Ages saw an explosion of such works produced in Spain and Byzantium (in book, rather than web form). Isadore of Seville is most famous for this.
But no one ever really doubted that if the choice was between reading Isadore's Etymologies or sitting down with Isadore himself (or his later equivalents), the latter was infinitely preferable, producing both a more enjoyable experience, but also a deeper learning.
