I suppose in our sources, who often deal with big wars that involve multiple poleis, the demonyms serve this purpose - 'the Athenians' 'the Thebans' and so on. But that just underlines your very good point: there was no permanent army, only a permanent polis with a citizenry.

(And with the proviso that most Greek wars were not the 'big ones' with grand coalition armies, but probably smaller war between smaller poleis, without grand coalitions)

Yes, the coalition army does a lot of the work to (apparently) align concepts. It's a paradigm that deserves more attention than it gets.
