If you are interested in how knights fought, there is good news: they wrote and told us. Both in literary ways, but also in late medieval fighting manuals, which describe complete systems of fighting. Those sources aren't without problems, of course. But...
...late medieval fighting techniques are actually a lot more recoverable than many pre-modern fighting systems. The Roman fencing system is, for instance, probably forever beyond our reach. So, don't rely on silly BoN stuff; use historical sources instead.
