Sorry, am I to understand that there is Serious Discourse happening re: the fact that Chinese people eat more than the four historically random animals westerners have ravaged the biosphere in order to mass-produce for slaughter
I don't care what culturally contingent animals folks eat - that stuff is functionally random. Cats, dogs, snakes, whatever. But my understanding is that the conditions of many Chinese wet-markets are very bad, leading to outbreaks like the current one (cf. also 'bushmeat')

At the same time, it is my understanding that Chinese dietary habits, as well as traditional Chinese medicine, fuel poaching for some of the world's most endangered species - like pangolins, rhinos, etc - which probably also needs to stop.

Sure - both of those seem bad to me! They don't mean, however, that a relatively omnivorous diet is intrinsically worse or, indeed, historically unusual to any degree worth exoticizing. (Which is what it sounds like people have been doing?)
