Then why does it feel like an omission in Payday and not in Metal Gear? In MGSV I never thought to myself "Better close that door!" I think it's because Payday draws a lot of parallels to Rainbow Six (specifically 3), so I end up comparing the two a lot.

Considering I've never once considered closing a door in Payday 2, I don't think it feels like an omission. Payday was originally heavily based off Left 4 Dead, but the second game got stealth. I'll take your word that it's stealth is based off Rainbow Six 3, haven't played it.

The stealth in Payday 2 has a decent amount of depth to it, but not as much as a dedicated stealth game. Payday 2 is primarily an FPS RPG made to be styled after movies like Heat. "Bank heist gone wrong" was pretty much the focus.
