I mean in Metal Gear Solid 5 you can't close doors. You can't even open a door without going through it. You'd think you could just wall cover to the side and push it open like in Hitman, but you can't. I still love that game though.

Then why does it feel like an omission in Payday and not in Metal Gear? In MGSV I never thought to myself "Better close that door!" I think it's because Payday draws a lot of parallels to Rainbow Six (specifically 3), so I end up comparing the two a lot.

No, but it's part of the game's balance. Don't open a door if it's going to bite you later. I know it sounds weird, but think about how much weird shit in games you don't question. Killing a civilian makes more special swat appear, killing 500 cops doesn't.
