There’s a Rommel like thing going on with Saurfang. So, Rommel was held up as being a more simplistic, honourable guy after the WW2, with much of that being pushed by the allies in order to ease the German people back into the fold & give a character to rally around.

If he still intends to play the role of the honorable warcheif (as I expect he is) then yes. However both he and Anduin are aware of that and they have to live with the fact that they're pushing a false narative for the greater good of Azeroth.

There's quite a lot of him realising that most of his actions were never honorable and while the horde does hold up honor as an ideal, a lot of it's actions have been dishonorable. They haven't whitewashed him, he simply realised the error of his ways and he wishes to correct jt

I think the real answer is that the clash of both characters was supposed to stir up and engage players into either ideology, but once they noticed the crowd's very negative response to Sylvanas' character they backtracked on it and simply made her a vilain.
