Does the distrust of the CA apply to mobile iOS or just Safari? If the former some mobile apps may be doing CA pinning. If the CA is removed in the iOS trust list, native mobile apps will not be able to connect to a site that still uses chained cert past the date, right?

Exactly, the change applies to the OS. Apps may need to ship an update, changing the pinning rules.
