There was something on the BBC a while ago comparing different methods of making porridge. Instant oats vs quickly cooked oats vs slowly simmered milky oats. IIRC instant oats are further processed to allow cooking via rehydration whereas the less processed needing longer.

It all depends on taste preference really. I prefer to make mine from Scottish oats with milk, slowly simmered over a longer period. But I did have water-made oats for a while some years ago, and milk-made oats became very rich and enjoyable when I had them.
