AFAICT, that person is running a SaaS business, hosting third-party software (Minecraft) for $10/month, at basically zero cost.

Well, that's one of the "rewards". I'm sure they'd get a lot of support without that particular reward.

But it's certainly hard for open-source projects to offer low-cost, high-value incentives when they give the main product away.

I don't have time to go digging, but what are typical Patreon "rewards" for software projects?

Free subscriptions/software, t-shirts, thank you/recognition page. meet up with the developers for a beer and etc.

Yep, basically everything but actually making the software better on a better schedule.

:-( Any of them have bounties like "$100 gets you a fix for one of the bugs tagged as medium-difficulty"?

I have seen that once or twice. But $100 doesn't cover the (opportunity) cost of fixing a medium-difficulty bug.

I don't want to pay somebody $100 for a day of work, because it encourages unsustainability.
