For what it's worth I tend to think our fascination with violence is what drives us to play violent games and not vice versa.
Also...games feel more alive when there are animated characters that are interactable, but for some reason it often feels more satisfying to bop them from the playing field than, say, to talk to them. But it's harder to come up with other things to do with them that are also fun

Maybe it is as simple as they are a checklist of things to do, and bopping them out is an easy, visceral way to convey "Task completed! On to the next!"
