You can middle click the icon when it's running to open more instances, too
In windows 10, once I open, say, Chrome, the chrome icon on the taskbar goes away and the only way to open more instances is to use the right click menu on your existing instance. How do you disable this behavior?

You cant. Thats how it works. I usually open a second tab, then drag it off the title bar(down like an inch) and let go. Now you have 2 instances..

Right click on the Chrome icon (shortcut on your desktop or in the start menu) then pin to taskbar... Not sure if that's why you're after?
