oddly enough I had the same issue until I did the Rito divine beast. The ability it gives changes the games flow dramatically
Oh, where is that? I am in the Garudo desert spinning my wheels there right now.

the rito village is north of the gerudo desert, has a highlands feel to it, if you hit snowcapped mountains you've gone too far.
