I feel like Assassin's Creed Origins and Oddyssey do themselves a disservice by having the characters begin with God level parkour and climbing skills. It almost makes it so that the world feels more flat than it should since everything is traversible.

Yeah it would need additional design to make it worthwhile returning. They could also just tone down the more superhuman climbing movement.

lol, I personally find explicit skill trees pretty boring and "cheap", like, they usually feel like a way to artificially lengthen gameplay, it often feels too "gamey" in games that are way too cinematic for that

Like, you know beforehand what the skills are and what you'll be able to unlock, this feels way too separated from the game's narrative if you can just go in a menu and use gamey experience points to unlock skills

The first couple games in the series had a progression, giving you the ability to catch ledges or just up walls as you progress, so it being tied to progression wouldn't be odd for the series. I'd avoid a stamina system though. That'd feel too far from the series core gameplay.
